MOUTH WATERING DISH OF UTTRAKHAND : THECHWANI

 The Thechwani recipe come originally from Garhwal.Potatoes and radish root[pahari mula] are cooked in varied masalas and chilies .The radish root or the potatoes are used inn crushed form in this recipe.

Ingredients of thechwani : garlic,ginger,whole green chilies,onion,salt to taste,red chili powder,turmeric powder,coriander powder,tomato,potatoes,radish.

In this dish ,potatoes and radish are used crushed.Thechwani can be made of onion - potatoes ,potatoes - radish ,etc. but the main ingredients should be crushed . By the time you are crushing and  adding the vegetables , keep enough water for boiling.

How to make Thechwani?

1. In a mortar and pestle, crush garlic ,ginger , green chilies and make a paste.Then crush potatoes and radish.

2. Heat oil in the frying pan.

3. Add jakhya.

4. Stir fry crushed garlic - ginger -green chili paste.

5. Add the chopped onions and sauthe till pink.

6. Add potatoes and sauthe and then add radish and sauthe.

7. Add spices and then sauthe.

8. Add a little boiling water and keep on cooking . Add chopped tomatoes [it should be covered by the vegetables].

9. Cover with a lid and cook on slow fire till the potatoes and radish become tender.

10. Make sure the water is enough and there is thick gravy too.
