PATYUD /GHUNDLU
As the season of monsoon starts, a very delicious dish called patyud/gundlu is made in almost every garhwali home.
Making padyud /ghundlu is easy but quite difficult to mix the batter with the leaves of Arabi.Both the dishes are different but made from the same leaves,i.e. Arabi.
Ingredients
Serving: 2
Arbi ke patte(Leaves) 5
Besan 5 tablespoon
ajwain 1 teaspoon
Chopped Green Chillies 2
chopped coriander leaves 1 tablespoon
Red Chilli Powder 1/2 teaspoon
Haldi 1/2 teaspoon
a pinch of Hing
Mustard oil 3 teaspoon
salt as per taste
Chat masala
Lemon juice 2 teaspoon
White sesame seeds for garnish
Instructions
Clean the Arbi leaves with water. Make a paste by mixing all the other ingredients.Apply a layer of paste on one leaf and place the 2nd leaf over it. Now apply paste on 2nd leaf and cover with 3rd leaf. Repeat the same procedure till all 5 leaves are smeared with paste of besan.
Carefully pack the leaves. Place the roll in a steamer for 15-20mins.
After cooling slice into 1/2 inch thickness.Shallow fry the slices in a pan and after getting crisp serve them in a plate and garnish with Bhang ki chutney or whatever thing you like.
It's made in monsoon season and is one of my favorite dishes made in the monsoon.
